Spanish Bar Cake was a very simple bar shaped raisin spice cake with an unfussy vanilla frosting. Being a fan of old time recipes, I certainly became quite interested in finding a recipe. Turns out this cake was made by Jane Parker Bakery and sold through the A&P supermarket chain in the US & Canada.

A&P Spanish Bar was my favorite! I wrote to A&P a few years ago and they gave me the recipe pared down from their oversized one. The Great American Tea Company, founded in 1859 in New York City, later changed their name to A&P and became an innovator in the grocery industry. A&P's Spanish Bar came into popularity, especially during the 1940s. This cake used very few eggs and relied on affordable dried spices to add flavor to the cake.
